Here's something I found to quiet the engine. At any time during a race, go to the instant replay screen and choose the camera angle that is in the car or in front of the car looking forward. Now, go back to racing and you'll have a quieter engine.
NOTE: If you change your view while racing your engine will revert to being loud.Paintball modeSelect single race mode, then hold Left + R and press B, A, B, A, B, A, B, A at the track selection screen. Alternatively, hold Left + R and press B + A, B + A, B + A, B + A at the track selection screen.Slow-motion replay Pause the game and select the "Instant Replay" option. Then, press Up/Left or Up/Right on the Analog-stick to view the instant replay in slow motion.
